Somewhere over the rainbow way up high, there is a young man by the name of Will. The sunshine of my life, most always smiling and happy. The memories of a lifetime, seventeen years in our lives on earth. The impact he had on so many people that had the pleasure of knowing Will. The twinkle in his eyes, so kind, polite and generous. A true son and friend. He lived with the courage to help friends through difficult times. This is the last day of May, your birth month, Will, take care and be safe where ever you are today and always. Love Mom

Aly's Vegetable Won Ton Recipe

Aly's Vegetable Won Ton Recipe
Perfect every time

4 cups cabbage, shredded
1 heaping cup carrots, shredded
3 green onions, minced or 1/2 cup pre-chopped
2 Tbsp. Fresh cilantro, chopped
1 garlic clove minced
1/2 Tbsp. Soy sauce
12 won ton wrappers
1-2 Tbsp. Coconut oil or canola oil
1-2 Tbsp. Water

1. Combine cabbage, carrots, green onions, cilantro, garlic, soy sauce and oil in a bowl and mix well.
2. Put a small spoonful of filling in each won ton wrapper.
3. Fold to make triangle, then fold in the sides. Repeat for each won ton.
4. Heat oil in a nonstick skillet over medium-high heat, until hot.
5. Place won tons gently in pan and cook until bottoms are crusty and brown, about 3 minutes.
6. Pour water into pan, cover, and steam for about 2 minutes.
7. Remove from heat and serve.

Milestones Missed

Milestones Missed

Will, my son, you're twenty one. Sadly, another milestone missed. Similar to the others, getting your driver's license, turning eighteen and voting, graduating from high school, going to college, finding the love of your life and soulmate.

All that is left for us to cherish are memories of your childhood, wonderful memories, our trips to your favorite places Kauai, Disneyland, San Diego, England. Water Polo games, you were so good, proud parents we are. Playing with your sister, nephews and nieces and cousins hiking outdoors, go carting, water slides, so full of life.

What a handsome young man you turned out to be, those green, green eyes, your beautiful smile your kind and gentle spirit. Shining so brightly with your life ahead of you. I am so sorry that will never happen for you. I love you and miss you, enjoy your twenty first wherever you are! love Mom
